All Yamada Nishiki rice exclusively for Shimonoseki Sake Brewery by contract farmers is used. Uses medium soft water that flows below the granite located 160m directly below the brewery.

It has the flavor of fresh banana, enhancing the ripeness of the fruit with a soft finishing aftertaste.
